As Saint Patrick’s day rolls around, I am reminded of pots of gold, leprechauns, and most importantly, decadent desserts. While looking for an exciting traditional recipe to try for this holiday, I stumbled upon this rich dessert recipe by Scott and Chris Scheuer on The Café Sucre Farine. The minute I clicked on this recipe, I knew I had to try it out.

Although at first it seems difficult to make, this creamy chocolate recipe was surprisingly quick and straight-forward. A thick, dense chocolate texture similar to that of a chocolate mousse makes this recipe perfect for any special event. Although labeled “Irish pots de crème”, this recipe dates back to 17th century France.

To make, You will need:

  1. 6 ounces semi‐sweet chocolate chip
  2. 1 large egg
  3. 1 teaspoon pure vanilla extract
  4. a pinch of sea salt or kosher salt
  5. 1/2 cup plus 2 tablespoons heavy cream
  6. cocoa powder to garnish*
  7. whipped cream to garnish*

*optional

How to make:

  1. Place your chocolate chips, sugar, egg, vanilla, and sea salt in a blender. Pulse in the blender a few times initially to mix the ingredients.
  2. Pour the heavy cream into a microwave-safe bowl, preferably large to prevent over-spilling, and heat on high power for about 1 ½ minutes, or until the cream is boiling.
  3. For about 15 seconds, continue blending the ingredients. Slowly begin to pour the hot cream into the blender using a spout or funnel. Once all the cream has been added, place your hand on the funnel to keep it in place and increase blender speed to high.
  4. After blending for 1 minute, pour into separate bowls or dishes and refrigerate for 1 hour. This recipe can be made 2-3 days in advance. To store your dessert, place plastic wrap over top.
  5. To top it all off, you can finish with whipped cream, and garnish with cocoa powder and mint leaves.
