Pizza Bites
By the title you might think that pizza is an absolute no-no when you are on your diet. I think that is the worst part about being on a diet, you can?t eat the food you want! This week, I have an absolute awesome recipe on pizza bites. We all know that pizza is a classic favorite meal for many people and this healthy version recipe will let you feel less guilty about eating it.
Ingredients:
1 cup uncooked quinoa
2 large eggs
1 cup shredded mozzarella cheese (low fat)
2 teaspoons minced garlic
1/2 cup fresh basil
1/2 cup diced cherry tomatoes
1/2 teaspoon of salt
1 teaspoon paprika
1 teaspoon dried oregano
Pizza sauce for dipping
Directions:
Place the quinoa and two cups of water in a covered pot.
bring to a boil and simmer for 20 minutes or until quinoa is tender.
Preheat oven to 350 degrees.
Mix together all ingredients, except pizza sauce.
Distribute mixture into a greased mini muffin tin, filling each cup to the top, and press down gently to compact.
Bake for 15-20 minutes. Cool for 10 minutes before removing from the pan.
Serve warm with sauce for dipping.

For three it?s 144 calories, 2.1 grams of fiber, and 8.4 grams of protein
