The home economics class fired up the kitchen grills to prepare chile rellenos and authentic tortillas, Nov. 12. Along with the rest of the class, senior Stephen Prince followed teacher Sharon Scharf’s instructions to fry the chiles and peel off the burned portion.
“Frying chiles was really fun,” Prince said. “I got good experience from cooking New Mexican food, and I found that it was delicious too.”
Home ec. students crafted the dish from “Big Jim” and “Tom Barker” chiles developed at the University of Mexico at Las Cruces. Teacher Sharon Scharf orders the seeds each year and plants them in preparation for her class.
“In the past, we’ve had a frost by now, so I haven’t had any chiles to share,” Scharf said. “But this year we’ve been lucky and my chiles are going crazy right now.”
Since he works in a pizza shop, Prince has experience with cooking. He completes the recipe on his own without hesitation whenever his partner is absent, according to Scharf. She appreciates his humor and enthusiasm in the class.
“I had never fried food before, but I enjoyed learning to prepare food that I had never tried before,” Prince said. “It was awesome and I would recommend it to everyone.”
