Taste buds on campus went south of the border while the California Scholarship Federation hosted a Mexican Fiesta on May 3. CSF sponsored the Mexican food day to raise money for the CSF Senior Scholarship Fund.

Campus celebration of Cinco de Mayo heated up at lunch. Cinco de Mayo is celebrated the day the Mexican people liberated themselves from the French who had occupied their country.

The annual Fiesta lunch tradition began five years ago. They decided to start this to recognize the seniors. Preparations for Cinco de Mayo lunch began two days in advance.

Handmade enchiladas are put together the day before. Most agree the hardest part is figuring out how much ingredients are needed for the meal. By three o’clock the day before, Molly Sargent, lunch organizer promises never to do this again; but she always changes her mind.

This year the CSF officers who lead the event were: Jon Steele, ’03, Tim Swift, ’02, Annie Falk, ’02, and Lindsay De Costa,’02 along with most CSF members.

“Student support of this event is vital to the future of CSF as well as ensuring the continuance of the senior scholarship,” Sargent said. “Its very important to me to recognize the academic achievements of seniors as well as their athletic participation and other talents.”

They served cheese enchiladas, with a serving of nachos, ice-cold lemonade, and choice of chocolate chip cookie or Rice Crispy treat, all for $4. Over 165 students bought the combo meal and many more just purchased nachos. John’s lunch truck was not on campus to serve food.

Falk prepared enchiladas in the kitchen, and CSF students brought chocolate chip cookies or rice crispy treats for dessert.

“It’s going to be a fun event to raise money for senior scholarship,” Falk said. “We are hoping to have a big event again in the future. We have done this event and we succeeded in making a lot of money.”

According to Sargent CSF has now met its fundraising goals for the year.

“CSF has now matched it goal of donating $500 to the senior scholarship fund,” Sargent said. “We not only help defer the costs of graduation like caps and gowns, but a deserving senior is awarded a small scholarship towards his/her continuing education.”
