As part of a life skills unit, Home Ec makes homemade chicken noodle soup, Jan. 27. The class split into three cooking groups, each making a quick 30 min. comfort soup. Ingredients below.
Ingredients:
-1 tablespoon olive oil
-1/2 cup carrots, peeled and sliced thin (about 1
large carrots)
-1/2 cup celery, sliced thin (about 1 stalk)
-1/2 cup sweet yellow onion, peeled and diced small (about 1 small onion)
-1 garlic clove, minced
-32 ounces (4 cups) chicken broth
-1 bay leaves
– 1/4 teaspoon fresh thyme (or 1/8 teaspoon dried thyme)
-1/4 teaspoon dried oregano
-1/2 teaspoon pepper, or to taste
-6 ounces wide egg noodles
– 1 cup shredded cooked chicken (use store bought rotisserie chicken to save time; or roast, boil or cook your own chicken in a skillet)
-1 to 2 tablespoons fresh flat-leaf parsley leaves, finely chopped
-1 tablespoon lemon juice, optional
-salt, to taste
